Ruz ahmar Rice with Onions

* 2 cups rice

* 2 onions, chopped very fine

* 1/2 teaspoon cumin

* 2-3 garlic cloves, crushed

* oil

* salt



Fry onions until they wilt, then add garlic and cumin and fry, stirring constantly until rich brown. Remove from flame and with the back of a spoon, mash until completely disintegrated. Add rice and fry until all grains are well coated with oil, then add 3 cups of hot salted water, cover, and allow to cook over moderate flame until tender. This dish is usually served with fish.
